3 Unique Back to School Lunch Ideas

It’s back-to-school time once again! Before you know it, kids will be bored of the same old lunches. Here are some healthy school lunch ideas to keep in mind!

Sandwich Sushi

Ingredients
• Inner ingredients of choice (you can choose anything form shredded, organic chicken, avocado and romaine lettuce, to something sweeter like all-natural peanut butter and bananas)
• Ezekiel bread (crust removed, rolled out thin with rolling pin.
Directions
1. Fill flattened bread with desired ingredients. Carefully roll the bread around ingredients, and slice into “sushi” pieces, and place in TupperWare.
2. Get creative and make savory and sweet sandwiches.
Savory Choices
• Organic chicken, grass-fed beef, aged-white cheddar, avocado, lettuce, black beans, sweet potatoes, etc.
Sweet Choices
• Nut butters, honey, fruit

Citrus Fruit & Avocado Salad

Ingredients
• 1 large citrus fruit of choice (grapefruit, orange, etc.), cut into wedges
• 1 large avocado, peeled and cubed
• 1/2 tbsp. of extra virgin olive oil
• 2 tsp. of lemon juice
• Salt
• A small handful of fresh mint leaves
Directions
1. Mix the citrus fruit and avocado in a bowl.
2. In a separate bowl, whisk the olive oil and lemon and season with salt. Spoon over the salad and garnish with fresh mint leaves, then place in TuppweWare.

Avocado Chocolate Pudding

Ingredients
• 1 ripe avocado, cut into ¾ inch pieces, frozen
• 1 ½ ripe bananas, cut into ½ inch slices, frozen
• 3 tbsp. agave nectar or honey
• 3 tbsp. cocoa powder
• 1 tbsp. coconut oil
• 2 tsp. lemon juice
• 1 tsp. vanilla extract
• Pinch of salt
Directions
1. Thaw avocado and banana slightly, about 20 minutes.
2. Place avocado, banana, agave nectar, cocoa powder, coconut oil, lemon juice, vanilla extract and salt in blender or food processor and blend for 60 seconds. Scrape sides of bowl as necessary. Continue until smooth and creamy
3. Scoop into small TupperWare in place of pre-packaged pudding in your kids’ lunch boxes. Just be sure to have an ice pack in there.
