Chicken, Veggie & Egg Muffins

muffinIngredients
• ½ cup of diced, cooked chicken
• 1/2 cup of grated Swiss cheese or cheese of choice
• 4 to 6 eggs
• ¼ cup of veggies of choice
• Salt and pepper to taste
Directions
• Heat oven to 350.
• In a large bowl, whisk the eggs.
• Add the grated cheese.
• Add the chicken.
• Transfer this mixture into blender or food processor, and add vegetables. Don’t over blend.
• Grease your muffin pan with some coconut oil.
• Scoop the mixture into the muffin liner.
• Bake for 20 minutes or until toothpick comes out dry.

Hidden Veggie Mac & Cheese

macncheeseIngredients
• 16 oz. brown rice or quinoa noodles
• 4 tbsp. of grass-fed butter
• 2 ½ cups of shredded cheddar and jack cheeses
• 1 cup of almond milk
• 1 cup pureed carrot (blend carrots in food processor and puree)
• ¼ tsp. of salt
• pepper to taste
Directions
• Preheat oven to 350 degrees.
• Boil pasta according to package directions. Drain and return to pot.
• Stir in butter over low heat until melted. Remove from heat.
• Stir in cheese.
• Add in carrot puree and stir to combine.
• Add almond milk, salt and pepper.
• Transfer to a 2 ½ quart greased baking dish and bake for 30 minutes at 350 degrees.

Strawberry and Nut Butter Quesadillas

Makes 4 quesadillas
quesadillasIngredients
• 4 8-inch whole wheat tortillas
• ½ – ¾ cup natural, creamy nut butter of choice
• 1⅓ cup thinly sliced strawberries (about 12 large berries)
• ¼ cup sliced almonds
• ¼ cup shredded, unsweetened coconut
Directions
• Preheat a skillet over medium-high heat.
• Spread 2-3 tablespoons nut butter over each tortilla.
• Top half of each tortilla with ⅓ cup sliced strawberries, crowding the berries very closely together.
• Sprinkle 1 tablespoon almonds and 1 tablespoon coconut over berries.
• Fold the quesadillas in half.
• Place a quesadilla into the preheated skillet and cook on the first side for just a minute or two, checking frequently.
• Once the quesadillas begin to turn golden brown, flip each over and cook for just another minute or two.
